When Haitians ask "what's your name?" Sometimes they add "se" at the beginning of the question. Right?

Right.
They often add "se" before other questions too.

Se kijan ou rele?
What's your name?

Se kimoun ou ye?
Who are you?

Se ki kote ou soti?
Where do you come from?

Se kisa sa ye?
What is this?

Se kimoun ou panse w ye la?
Who do you think you are?

Yes, this happens often. But you certainly don't have to learn it that way. Adding "Se" in front of the questions is not necessary
