Can the haitian creole word for "man" or "woman" be also used as an adjective?

The answer is yes.

gason (adj.) → macho, hunk, courageous, brave
fanm (adj.) → womanly, sensuous, matronly

Examples:

Li pi gason pase w.
He's more manly that you.

Pa gen fanm ki pi fanm pase ou.
No women is more sensuous than you.
